D\u00e9couper les aubergines avec leur peau en tranches d\u2019environ 1 cm d\u2019\u00e9paisseur, saler et laisser d\u00e9gorger pendant environ une demi-heure. Rincer les tranches et les s\u00e9cher avec du papier m\u00e9nage. Les faire revenir l\u2019une apr\u00e8s l\u2019autre dans de l\u2019huile d\u2019olive, saler, ajouter les tomates pel\u00e9es et coup\u00e9es en d\u00e9s, faire rissoler le tout pendant quelques minutes.<\/p>\n<blockquote><p><strong>Ingr\u00e9dients<\/strong><br \/>\n\u2022 500 g de viande d\u2019agneau<br \/>\n\u2022 3 aubergines<br \/>\n\u2022 huile d\u2019olive<br \/>\n\u2022 3 tomates<br \/>\n\u2022 3 oignons<br \/>\n\u2022 ail<br \/>\n\u2022 2 cs de pur\u00e9e de tomate<br \/>\n\u2022 sel et poivre<br \/>\n\u2022 1 cc de sucre<br \/>\n\u2022 un peu de cannelle<br \/>\n\u2022 2 cc d\u2019origan<br \/>\n\u2022 1 cc de thym<br \/>\n\u2022 1 bouquet de persil<br \/>\n<strong><br \/>\nSauce<\/strong><br \/>\n\u2022 1 yoghourt<br \/>\n\u2022 1.5 dl de cr\u00e8me fra\u00eeche<br \/>\n\u2022 1.5 dl de cr\u00e8me aigre<br \/>\n\u2022 3 oeufs<br \/>\n\u2022 noix de muscade<br \/>\n\u2022 sel et poivre<\/p><\/blockquote>\n<p>Faire revenir dans une autre po\u00eale la viande (hach\u00e9e ou coup\u00e9e en d\u00e9s) \u00e0 forte chaleur, ajouter les oignons \u00e9minc\u00e9s et l\u2019ail, lier avec la pur\u00e9e de tomate, ajouter le sel, le poivre, le sucre (ou un peu de miel), un peu de cannelle, l\u2019origan, le thym et le persil hach\u00e9.
